Cilantro Lime Cauliflower Rice with Video
(see video below)
Riced cauliflower has become really popular since the whole LCHF lifestyle started taking off. I have been trying to get back on my game, so tonight I made this Cilantro Lime Cauliflower Rice.
The thing I love about cauliflower rice is that it’s texture (when-done right) is a lot like regular rice. And this Cilantro Lime Cauliflower Rice was no different. The cilantro and lime gave it some amazing flavor, causing any blandness you associate with traditional cauliflower to go away and it is, vegan, gluten free and paleo.
You can eat this as a stand alone, for a quick snack in a taco bowl (recipe soon) or with plain chicken breast, the possibilities are pretty much endless. This is definitely one I will make again and again. With LCHF you really have to be willing to try things you wouldn’t normally try and this is one that i do not regret.
I did really well with the diet for a good while and through meal prep and plain on motivation to have an awesome summer body, I plan on getting it back together. I would love to hear your tips as far as what you do when you feel like a ‘cheat day” because mine turn into a good 6 months or more.
