Instant Pot Cilantro Chili Lime Shredded Beef
My family loves cilantro, and anything you can stuff in a soft taco shell. I was a little tires of the hum drum of the traditional taco, so I decided to shake things up a bit with this Instant Pot Cilantro Chili Lime Shredded Beef.
It turned out absolutely amazing, and the only thing I added to the tortilla and meat was a little sour cream. My kids put a little salsa on their Instant Pot Cilantro Chili Lime Shredded Beef. I didn’t need it. It’s amazing how much the Instant Pot has changed our lives. We are eating so much more fresh foods, eating out less and just over all eating healthier. If you haven’t already, you really need to get on board! The yogurt is life changing!

- 1 (2 to 3 pound) beef chuck roast
- 4 cups lemon lime soda
- 1 teaspoon chili powder
- 1 teaspoon salt
- 3 cloves garlic, minced
- 2 limes, juiced
- 1 cup cilantro
- Put all ingredients in the instant pot
- Put on and lock lid
- Press manual and set for 70 minutes and allow to natural release
- Once pressure drops, remove lid and shred with 2 forks and serve
- Garnish with limes and cilantro if you like
