I have been on this low carb eating kick for about 2 months now. Well, I shouldn’t call it a kick, it is and will forever be a way of life if I want to lose the rest of this weight and stay smaller and healthier. I am learning that eating healthy doesn’t have to suck major balls. It can be as heavenly as that early morning poop! Take this Creamy Cheddar Cilantro Lime Chicken for example. I found a recipe that I wanted to try and decided to put my own spin on it! And OMG, it was amazeballs!
The way I described it on my Facebook page was “My lunch tasted just like glitter sprinkled unicorn meat” now this would be the absolute truth, if I knew what those things tasted like, but I have a vivid imagination and I’m pretty sure glitter sprinkled unicorn meat tastes like my Creamy Cheddar Cilantro Lime Chicken.
- 1/4 teaspoon Salt
- 1/4 ounce Salt and Freshly Ground Black Pepper
- 1 tablespoon Oil - Olive
- 1 cup Chicken Broth
- 2 tbsp s, Lime juice - Raw
- 2 tbsp s, Chopped Cilantro
- 1/2 tsp s, Red Pepper Flake
- 3 tbsp Heavy Cream
- 2 tbsp s, Butter - Unsalted
- 2/3 cup Shredded Triple Cheddar
- 4 Boneless Chicken Breast
- 1/2 cup chopped, Onions, raw
