Instant Pot Cheesy Ground Beef Goulash

Ingredients
- 2 lbs lean ground beef
- 3 teaspoon minced garlic
- 2 15- ounce cans tomato sauce
- 1 28 oz can diced tomatoes
- 1 tbs seasoning salt
- 2 tbs Italian seasoning
- 2 cups elbow macaroni, uncooked
- 1 cup shredded cheddar cheese
- 3 cups beef broth
- 1 onion chopped
- 1 teaspoon basil
Instructions
- Press saute on the instant pot and allow to heat about 3 minutes.
- Add ground beef and onion and using a chopper crumble meat as it cooks.
- Cook until no pink is left. Do Not Drain.
- Add garlic, basil Italian seasoning, and seasoning salt sautes for about 5 more minutes.
- Pour in broth, tomato sauce, and diced tomatoes.
- Add dry macaroni and stir well.
- Place on the lid and turn to lock, cook manual high pressure for 4 minutes
- When your IP beeps QR all pressure.
- Remove lid and add in cheese. and serve
Notes
For Stovetop Cooking
Boil macaroni according to package directions.
Brown ground beef in a skillet over medium high heat till no longer pink, using the chopper to crumble
Add tomato sauce and diced tomatoes.
Mix beef mix, mac and cheese and stir until mixed well.

I just made this tonight, with a few tweaks b/c I'm one of those that can never leave a recipe alone😉. Oh. My. Goulash! This tastes like the one my mom used to make growing up! DELICIOUS! The tweaks I made were because I didn't have fresh onion or garlic on hand (the horror!), I won't buy seasoned salt so I used what I had, and more liquid because my package of pasta was 17.5oz so a little more than a pound. I also got fancy and added tomato paste to the beef then deglazed with red wine. I did not stir the tomatoes/sauce in because my experience doing one pot pastas with spaghetti sauce is stirring tomato products into the liquid results in a burn notice so I layered.
My tweaks:
*Used Greek Seasoning for the Seasoned Salt
*used 4 cups chicken broth w/BTB flavors: 2tsp beef, 1tsp garlic, 1tsp mushroom added to broth.
*used 1/2c dry minced onion reconstituted in 1c water
*added 1 tsp parsley, 1/2 tsp crushed red pepper flakes
*used 3tsp freeze-dried fresh garlic
*mixed all dry seasonings together in cup and added 1/3 of the combined seasonings to raw meat as it was cooking. Added rest per recipe instructions
*when meat no longer pink, added 2tbs tomato paste, stirred.
*deglazed with about 1/3c red wine
*added broth & canned mushrooms then stirred.
*added pasta on top of meat, then layered diced tomatoes, and on top of that the tomato sauce. I DID NOT STIR.
