Broccoli and Cheese Soup Recipe

Ingredients
- 3 cups broccoli florets
- 2 cups shredded cheddar cheese
- 1 large cut carrot
- 2 cups half & half
- 2 cups chicken or vegetable broth
- ½ stick butter
- ½ chopped onion
- 2-3 minced garlic cloves
- 4 tablespoons flour
- ¼ teaspoon paprika
- ¼ teaspoon nutmeg
- Salt & pepper
Instructions
Cook the onion in a large pot over medium heat.
Add in the garlic and saute for about one minute.
Add the flour and whisk until it's a golden brown color.
Stir in the carrots, broccoli, broth, nutmeg, and paprika.
Bring the mixture to a boil and then reduce the heat. Let it simmer for 15 minutes.
Stir in the cheese and the half and half.
Simmer for another 2 minutes.
Add salt and pepper if needed.
Serve and enjoy!
