I love soup and this is one that I make all year round. When I have fresh produce from the farmers market or even my own garden in the warmer months, it works great in getting them used up in this soup. What is so great about this soup is it takes minimal time to cook, because of the Instant Pot. My Instant Pot can cook in a fraction of the time as a traditional stovetop or slow cooker recipe would call for. So if you are limited on time, raid your pantry and fridge for ingredients and whip this up in no time flat.
Easter is right around the corner, and you might have some leftover ham on your hands. It's a great way to take that ham and create a whole new meal out of it, so it doesn't feel like you are eating leftovers. Just dice it up, and no one has to know it is leftover ham. Or if you want you can buy fresh ham to make this soup with. I always just struggle with how to re-create new dishes with leftovers to get my family to eat it, so I thought some of you might like this idea. Instead of little ones turning their noses up, they devour this soup, not knowing it is a form of leftovers.
Rich and Creamy Instant Pot Ham and Potato Soup
A few fresh veggies, ham, seasonings, and ingredients to make a creamy sauce, is all this hearty soup requires. Then you can top it with your favorite toppings or serve with a side of saltines or oyster crackers. A few of our favorite toppings are shredded cheese, a dollop of sour cream, chopped up parsley, and for those who like a little heat, a splash of hot sauce. I am not huge on the heat factor, but I know some people who are, and a splash of hot sauce will do the trick!
One mom trick I learned years ago when my kids were little is if they are picky let them help cook. They can toss ingredients into the Instant Pot, and then help you push the right buttons. That way when it comes time to eat dinner, you can remind them it has to be good because they helped you make the dish. I found this to be a huge selling point, and the kiddos would agree and then begin eating the dish I made. No one wants to say they made a bad dinner? I know my kids never wanted to!

Ingredients
- 8 cups potatos, diced
- 1 small white onion, chopped
- 1 cup carrots, sliced
- 1 cup celery, sliced
- 2 cups ham, cubed
- 1 teaspoon salt
- ¼ teaspoon pepper
- 4 cup chicken broth
- 2 cup heavy cream
- ¾ cup sour cream
- 2 cups cheddar, shredded
Instructions
- Add all veggies to your pot
- Add ham
- Pour in chicken broth
- Add salt and pepper
- Stir well
- Put on and lock lid
- Cook high pressure for 6 minutes
- Remove lid and stir
- Add remaining ingredients, reserving ½ the cheese
- Stir well, serve with remaining cheese
