Ingredients
- 1 tablespoon fresh garlic minced
- 2 tablespoons butter
- 1-ounce cream cheese, cubed
- 2 tablespoons almond flour
- 1 teaspoon baking soda
- 2 large eggs
- 1 teaspoon dried chives
- ½ cup parmesan cheese, shredded
- ¾ mozzarella cheese, shredded
Instructions
- In a small saucepan, heat butter and cream cheese over low-medium heat until melted. (separation is okay)
- Add in garlic and heat, stirring constantly for about 2 minutes or until fragrant. (expect to see separation)
- Preheat waffle maker.
- In a small mixing bowl, add flour and baking soda, then whisk together then set aside.
- In a separate mixing bowl, beat eggs on high for 90 seconds, then add in butter mixture and beat for an additional 60 seconds.
- Add flour mixture, dried chives, and cheeses to bowl and stir until well combined.
- Generously grease waffle maker with low-carb cooking spray.
- Scoop ¼ cup of batter into the waffle maker.
Close and cook for about 4 minutes or until golden brown.
- Add desired toppings and serve.
Notes
Change this recipe up to make it your own by swapping out the cheeses in the recipe for any kind of cheese. You can also use egg whites, as opposed to the whole egg.
