One of my all time favorite meals to cook is a Caprese Chicken. Not sure what it is but the delicious mix of tomatoes, mozzarella cheese, and tangy balsamic vinegar dressing makes this the perfect way to eat chicken.
There are many different variations to the Chicken Caprese and many different ways to enjoy it.
I have a great new way to prepare Chicken Caprese and the greatest part it that it is low carb! Get ready to try out these Low Carb Chicken Caprese Cups.
Not only do you get to enjoy that same wonderful taste, but in an easy make ahead cup. This dish is great to take to work with you for lunch, eat on the go, or just to sit down and binge watch TV one night. It is extremely simple too.
I like to have these cups with mashed cauliflower and asparagus. You can also drizzle with balsamic vinegar.

Ingredients
- 1 large, Egg
- 2 lb, s, Ground Chicken
- 1 Cup Cherry
- 2 tbsp, s, ground Basil
- 8 oz fresh Mozzarella
- ½ tsp, s, Spices, garlic powder
- ¼ tsp, Salt and Pepper
Instructions
- Pre heat oven to 400.
- In a large bowl mix all ingredients with your hands.
- Press mixture into a greased muffin pan.
- Bake for 25 to 30 minutes.
- Cool 5 mins and serve.

Jim think there is an error in the recipe. Are there really cherries in the recipe or should this be chopped cherry tomatoes?
