Raspberry Cheesecake Fat Bomb Recipe

Cook Time: 30 minutes
Total Time: 40 minutes

This cheesecake fat bomb is so very delicious and is guaranteed to give you the energy boost you are wanting. Your taste buds will be happy and your body will be too!

Ingredients

  • 2+1 tablespoons coconut flour, divided
  • 2+2 tablespoon butter, softened & divided
  • 8 oz cream cheese, softened
  • ¼ cup almond butter
  • 1 tablespoon vanilla
  • 2 tablespoons low carb confectioner’s sweetener (Swerve)
  • ¼ - ½ cup frozen raspberries, diced

Instructions

  1. In a small saucepan, add 2 tablespoons coconut flour and 2 tablespoons butter and toast over medium heat until beginning to brown. Remove from heat and set aside.
  2. In a large mixing bowl, beat cream cheese, vanilla extract, and 2 tablespoons of butter until light and fluffy. Add in almond butter and beat until well combined.
  3. Add in sweetener and 1 tablespoon coconut flour and beat until combined.
  4. Beat in raspberries.
  5. Cover mixing bowl with plastic wrap and refrigerate for 20 minutes.
  6. Prep a work surface with a sheet of parchment paper.
  7. Using a spoon, scoop 2 tablespoons of mixture and roll into golf ball-sized balls.
  8. Dip the lower half of each ball into toasted coconut flour and place it on the parchment surface.
  9. Place in the freezer for 30 minutes.
