One thing I have seen more and more is that so many households are busier than ever. From shuttling kids to school, then after school activities, volunteering your time, errands, and the list continues.
When we live in such a busy world we can sometimes neglect ourselves. When I eat better I find I have more energy and know I am giving my body the nutrients I need.

For me I have kids and even though we are busy I want to make sure their growing bodies have nutritious meals and snacks throughout the day.
This is an old school saying, but feeding a range of colors you find in a rainbow is very important for everyone.
I also know for me as each year passes I know I need to make sure I am eating foods that give me the energy to get through my days. We also love protein as it helps fill my family up and tide us over until the next meal time.

Simple Tips To Eat Better This Year
- Prep Fruits And Veggies
Have you ever went to the store and bought your fruit and veggies only to find they got pushed in the back of the drawer and you find them weeks later?
My tip is once you get home soak your fruits in a wash to help preserve them, and cut up and prep veggies then put them in containers whether glass or clear plastic. Then you can easily see them and grab. If I toss them in my kid's lunches I take sandwich bags and create single serving sizes so I can grab a bag and toss in the lunchbox.

Protein For Breakfast
I will be honest, I don't always have the time to cook breakfast in our home but I don't want my family reaching for a box of cereal each day. So while I was at Sam's Club the other day I bought a big box of Jimmy Dean Delights®, they are breakfast sandwiches that are made with turkey sausage, whole grain, egg whites, and cheese.
While we get the protein we need, we are able to have a wholesome breakfast option that keeps us on track for eating better.
You heat them up within a few minutes, and you can have a breakfast of champions while you are on the go. Serve with a side of fresh fruit, yogurt, or eat alone. This is our go-to breakfast when I don't have time to whip things up.
Snacks
When I shop I love to buy in bulk because I don't want to spend all my time at the grocery store. I love Sam's Club because I buy quality products in larger quantities so it can last me awhile. I look for snacks like string cheese, I buy eggs and make hard boiled eggs, whole wheat sandwich crackers, nuts, and so on. Then we have a variety of snacks to grab when we get hungry. We create a snack station where it is a basket full of snack options so when the kids get home they know they can pick any item in the basket to eat. I have one on our counter and then one in the fridge with items that have to stay cold.
Dinner Time
While we love a variety of foods, I try to create a fun way to eat our favorite meals in a more simple version. For instance, I grabbed a bag of Tyson Chicken Breasts and created some this awesome Instant Pot Chicken Rice & Tomato in our Instant Pot. I choose using my Instant Pot because it gives me the freedom of just forgetting it until it is done. Plus it is super quick to make dinner from start to finish with it.
Variety
Make sure to have a variety of meals and snacks. If you eat the same three things you might find you get tired of it, and revert back to old eating habits.

Instant Pot Chicken Rice & Tomato
Ingredients
- 28 oz can of tomatos
- 4 large chicken breast
- 2 tbs fresh parsley
- 1 tbs fresh basil
- 1 small onion, chopped
- 4 cloves garlic, minced
- 2 tbs butter
- 1 cup chicken broth
- 1 cup white rice
- salt and pepper, to taste
Instructions
- Press saute and allow to heat
- Add in butter and allow it to melt
- Add onion, garlic, parsley and basil and saute 5 minutes
- Turn off the saute function
- Add tomatos
- Add 1 cup of chicken broth
- Add rice and stir
- Top with chicken breast and lock on lid and close valve
- Press rice button when you hear the beep allow to NR all pressure
- Top with cheese and parsley and serve
