With chuck roast, you get a tender and moist cut of beef, that turns out perfect regardless of if you are using it for tacos or as a side dish.

Instant Pot Cilantro Chili Lime Shredded Beef
Ingredients
- 1 2 to 3 pound beef chuck roast
- 4 cups lemon lime soda
- 1 teaspoon chili powder
- 1 teaspoon salt
- 3 cloves garlic, minced
- 2 limes, juiced
- 1 cup cilantro
Instructions
- Put all ingredients in the instant pot
- Put on and lock lid
- Press manual and set for 70 minutes and allow to natural release
- Once pressure drops, remove lid and shred with 2 forks and serve
- Garnish with limes and cilantro if you like

Did this tonight pretty much followed your recipe, just added some corn starch at the end to thicken the sauce. My wife was scaping the bowl at the end of dinner. Thanks for the great recipe.
