- eggs, with the egg yolks separated from the egg whites
- sweetened
- condensed milk
- vanilla extract
- bananas
- Nilla wafers
With this banana pudding recipe, you will learn all about how to layer the wafers and banana slices. How to heat and stir the sweetened condensed milk just right so that you don't burn the pudding.
You can also replace the meringue on top with cool whip, whipped cream, or another whipped topping.
Some like to add a cup of sugar to their pudding to sweeten it up a bit. But, not us, this southern banana pudding recipe is perfect once the flavors of the bananas and pudding mix.
Tips While Making Homemade Vanilla Pudding
Don't burn your pudding mixture | Make sure to watch your pudding, and stir constantly. Because if you are not careful you can and will burn, and then you will have to start over. This isn't a recipe you can set and forget.
Make Sure They Are Nilla Wafers | It's just not the same as other vanilla wafer cookies. This is the recipe my grandmother used, and it is the best banana pudding recipe you will find.
Ripe Bananas | Don't go for under-ripe or over-ripe bananas. If they are over-ripe they will have so much flavor it could be overpowering. I aim for nice yellow colored bananas that have just a few tiny brown specks on it.

Homemade Banana Pudding
Homemade banana pudding is a creamy and delicious treat that has been made for ages. This southern banana pudding recipe is a family recipe passed down for generations.
Ingredients
- 9 Eggs, separated into 2 separate bowls
- 1 can sweetened condensed milk
- 1 can water, use your empty milk can
- 6 to 7 bananas
- 1 box Nilla Wafers
- Boiling water
Instructions
For the vanilla pudding
- Fill a saucepan about ¾ full with water and bring it to a boil. If you have a double boiler use that.
- Add sweetened condensed milk, vanilla and 1 can of water to the egg yolks mix well with a whisk and set aside.
- Pour the egg mixture into another, the top portion of your double boiler, a pan, or stainless steel bowl.
- Carefully sit the egg mixture pan on top of the boiling water pan ( or double boil) stirring constantly until it starts to thicken, about 7 to 10 minutes the pudding should coat the back of your spoon.
- Once it thickens turn it off and set it aside, allow it to thicken more while you prepare your bananas and cookies.
- In a pan or casserole dish layer wafers, bananas over and over till your pan is full.
- Pour the pudding evenly over your layers of bananas and Nilla wafers.
- Add egg whites to a mixer and whip on high until stiff peaks form (about 7-10 mins)
- Smooth the whipped meringue over the top of the banana pudding.
- Bake in a 375-degree oven for 10-15 mins, just until the meringue is browned.
- Let stand for 20 mins before serving.
Notes
If preparing this in advance, you may want to toss the bananas in the pudding and to help slow down the browning process.
Also note, putting banana pudding in the fridge will speed up the browning process, however, it will still be delicious.
Store in an airtight container for up to 3 days.
