This bite sized salted caramel Cheesecake recipe, is simply put amazing. The mini cheesecakes are the perfect amount of sweet and salty with the salted caramel sauce.

I make these bite sized cheesecakes for holidays as well as parties. Top with a little whipped cream for an extra treat.

Caramel Cheesecake bites are creamy and delicious cheesecakes made into tiny bites by using a mini muffin pan. This cheesecake recipe, in fact, features a traditional graham cracker crumb crust, in a mini baked cheesecake!

How Do You Cut Cheesecake Bites?

To clarify, there is no need to cut these cute little bites. We use a mini muffin tin to make these cheesecake bites. This way, they are the right size to pop right in your mouth!

If for some reason you choose a baking pan over the mini muffin tins, try using a warm knife to cut them. Run hot water over the knife and then the knife will melt the caramel cheesecake as you cut.

Bite Sized Salted Caramel Cheesecake Recipe

These salted caramel cheese cake bites are the best!


  • 1/2 cup graham cracker crumbs
  • 1 Tbsp. brown sugar
  • 3/4 tsp. kosher salt, divided
  • 2 Tbsp. butter, melted
  • 1-1/2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese (12 oz.), softened
  • 1/2 cup granulated sugar
  • 1 egg
  • 12 KRAFT Caramels
  • 1 Tbsp. milk


  1. Heat oven to 325°F. ingredients for bite sized salted caramel cheesecake recipe
  2. Mix graham crumbs, brown sugar, 1/4 tsp. salt and butter; press onto bottoms of 24 paper-lined mini muffin cups. gram cracker mixture in muffin tin
  3. Beat cream cheese and granulated sugar in a large bowl with an electric mixer until blended. cream cheese and sugar in a bowl
  4. Add egg; beat just until blended. creamcheese mixture and eggs in a clear bowl
  5. Spoon into muffin cups, adding about 1 Tbsp. to each. Bake 15 minutes or until centers of cheesecakes are almost set. Cool completely. Refrigerate for 1 hour. cheesecake in a mini muffin tin
  6. Place caramels in a small heatproof bowl. Add milk and 1/4 tsp. of the remaining salt. Place over a pan of boiling water, making sure boiling water does not touch the bottom of the bowl. Cook until caramels are completely melted and the mixture is well blended, stirring frequently. caramel in a bowl
