Cheesecake Swirl Brownies
Since I started my low carb diet I have found that I have more energy, and rarely cheat. When I have keto brownies that help give me that sweet treat that my body loves, it makes it easier to stay on track. If I get to where I don’t have a variety of delicious recipes, I begin to stray and then fall totally off the diet wagon. But being able to whip up a keto approved dessert makes it easy for me to keep chugging along.
The beauty of this recipe is you use basic pantry ingredients. Now if you are new to the keto diet, you might have to pick up some almond flour but everything else is pretty much staples in our home. Minimal ingredients and steps are needed to achieve perfectly sweet cheesecake swirl brownies in the end.
Just mix up your brownie batter, then in another bowl whip up your cheesecake batter. Pour the brownie batter into a greased pan and then drop your cheesecake mixture on top. Grab a knife and swirl the cheesecake mixture so it mixes somewhat with the brownie. Toss in the oven and wait for that timer to go off!
Why I Use Almond Flour For Keto Brownies
I love the flavor of almond flour brownies over say other flours that are approved in the keto diet. In my opinion almond flour gives you similar taste and texture to all-purpose flour. You really want to feel like you are getting that same brownie you would whip up out of a box or make homemade, and almond flour is my preference. - 1 cup unsalted butter melted
- 1 cup Splenda
- 2/3 cup cocoa powder
- 1/2 teaspoon salt
- 2 eggs room temperature
- 3/4 cup almond flour
- 1 package cream cheese 8 ounces softened
- 1 egg room temperature
- 1/3 cup Splenda granulated
- 1 tsp vanilla extract
- Preheat oven to 350°F/180°C.
- Line 13x9 inch pan with parchment paper on the bottom and sides.
- Set aside.
- Add butter, sweetener, cocoa powder and salt to a medium bowl.
- Mix until sugar and cocoa is completely dissolved
- Add one egg at a time, stirring well after each.
- Next, add almond flour, and stir until fully blended.
- In a separate bowl add cream cheese, egg, Splenda, and vanilla.
- Mix until smooth.
- Pour brownie mixture into prepared pan.
- Dollop cream cheese mixture in various spots onto the brownie mix and drag a knife through to create a marble pattern.
Bake 15-25 minutes or until a toothpick stuck into the center comes out almost dry. I always check in 15.
Remove when done and allow to cool a bit before serving
