- 4 Cups chicken stock
- ¼ Cup soy sauce

- 2 Cups portobello mushrooms, chopped
- 2 Chicken breasts
- 1 teaspoon ginger powder
- 2 teaspoon curry powder
- 2 tablespoon peanut butter
- 1 Clove garlic, minced
- 4 Squares ramen noodles
- 1 teaspoon Sesame seeds
Optional: soft boiled eggs, green onions, lime juice, coconut milk or rice noodles instead of ramen to make this a gluten free recipe.

You're not going to believe how amazingly tasty and easy making this gourmet chicken ramen soup is! So fast and fun, it's definitely one of my new go-to dishes for weeknight meals.
Ingredients
- 2 tablespoon sesame oil
- 4 Cups chicken broth
- ¼ Cup soy sauce
- 1 tablespoon honey
- 2 Cups portobello mushrooms, chopped
- 2 Chicken breasts
- 1 teaspoon ginger powder
- 2 teaspoon curry powder
- 2 tablespoon peanut butter
- 1 Clove garlic, minced
- 4 Squares ramen noodles
- 1 teaspoon Sesame seeds
Instructions
- In an Instant Pot, combine all ingredients, with the exception of the ramen noodles and sesame seeds.
- Close and lock the lid, then set to high pressure for a cook time of 15 minutes.
- Quick-release
- Shreds the chicken roughly with two forks and mix the soup a bit so everything is equally distributed throughout.
- Add-in the sesame seeds and ramen noodles and wait 3 minutes to fully hydrate the noodles before serving the soup.
