Oven Roasted Sweet Potato Fries From Scratch

Sweet Potato Fries can be a super delicious side dish or make then as an appetizer perfect for the snack. 

If you love french fries then this oven-roasted sweet potato fries recipe is a great recipe for you.

The secret to perfectly crunchy sweet potatoes fries is soaking the raw sweet potato in cold water for at least 30 minutes (but 1 hour is even better!) Doing so gets rid of most of the starches that make sweet potatoes mushy.

Switch up the flavors and spices used in this sweet potato fries recipe to suit your taste some other things you can use are.

  • smoked paprika
  • salt and pepper
  • garlic powder
  • chili powder

Or any other spices that you love.

How To Cut Fries

And cutting the potatoes for these delicious sweet potato fries is so super easy using this French Fry Potato Cutter

You could even throw these in the air fryer, just make sure to toss with oil in a large bowl before you add them to your air fryer, but they will be done in only a fraction of the baking time!

Lay them in a single layer on the air fryer oven rack, because sheet pans are too big to go in there.

The herbed butter topping is super easy to make. I highly recommend that you make a big batch of it, as you can use it on other things.

You can use some to drizzle over the sweet potatoes before baking but you can also use it for mashed potatoes or let it cool in a jar so it hardens up, it’s amazing served with toasts and dinner rolls too!

If you want to reheat the potatoes just drizzle with a little bit more of olive oil and bake for around 8 minutes, or throw them in the air fryer to re-crisp.

How to reheat fries in the air fryer

  1. Preheat

    Preheat the Air Fryer to 375.

  2. Arrange

    Place the sweet potato fries in the air fryer basket or on the rack in a single layer.

  3. Cook

    Cook your fries in the air fryer for 3-4 minutes until they are crispy again.

How To Make Sweet Potato Fries From Scratch

Prep Time: 20 minutes
Cook Time: 45 minutes
Total Time: 1 hour 5 minutes


  • 3 Big sweet potatoes
  • 3 Tbsp butter
  • 2 Garlic cloves, minced
  • 1 Tsp onion powder
  • 1 Thyme sprig 
  • Salt and pepper to taste
  • 2 Tbsp olive oil
  • 2 Tbsp cornstarch


  1. Wash and scrub the sweet potatoes.
  2. Cut into 1/2 inch sticks and place in a bowl.
  3. Cover with cold water and set it aside for 30 minutes to an hour.
  4. Drain the potatoes and pat dry with a paper towel.
  5. Toss the potatoes with cornstarch and set aside. 
  6. Preheat oven to 400 degrees. 

Garlic Herb Butter

  1. In a saucepan over medium heat melt butter, add onion powder, thyme, and garlic and cook until fragrant.
  2. Add salt, pepper and olive oil and mix until well incorporated.
  3. Remove from fire and discard thyme. 
  4. Drizzle the sweet potatoes with garlic and herb butter and place the pan in the oven.
  5. Bake for 20 minutes, flip and toss and bake for 25 minutes more or until crispy.
