I love taco bell Mexican pizza, so in the spirit of continuing my tradition of attempting to duplicate my restaurant favorites, I had to come up with my own Mexican pizza recipe.

I love this recipe, it is a flavorful combination of seasoned ground beef, enchilada sauce, flour tortillas, refried beans, and Roma tomatoes. A simple recipe to make at home for a Copycat Taco Bell Mexican pizza at home.

I decided to make this Mexican pizza recipe in my Power Air Fryer Oven. And it turned out amazing. I have recreated a few of my favorites using my air fryer or instant pot.

Does the Mexican pizza have meat?

Yes, this Mexican pizza recipe does, the first tortilla is topped with refried beans and seasoned meat, I like to use my homemade taco seasoning.

If you are vegetarian you could definitely leave the meat off without taking away from the awesomeness of this great recipe.

How much is a Taco Bell Mexican Pizza?

A Mexican pizza from Taco Bell is right around $3.50. But for that amount you can make a few if you use this Mexcian pizza recipe. At least 4 and will have some ingredients leftover.

This Mexican pizza recipe can easily be made using the stove also. With both methods, you will brown your meat over medium-high heat.

And with the tortillas, you can preheat your oven, put them on a baking sheet and make them crunchy in there.

The one thing I did notice with crisping them in the air fryer is that as they “dry” out they tend to get lighter and fly around a little bit.

To prevent this if you have the air fryer oven you can put a second airflow rack on the slots above it when making this Mexican pizza recipe.

Did you know, that you can cook from frozen in both the instant pot and air fryer? I also often use my air fryer to reheat things that may get “soggy” in the fridge.

Copycat Taco Bell Mexican Pizza Recipe

You no longer have to worry about throwing out fries or this Mexican pizza recipe, because just a few minutes in this thing makes them taste like when you ate it the first time.

I have had the Power Fryer XL and recently upgraded to the Power Fryer Oven.

I blessed my bestie with the old one, she loves it! And I am deeper in love with my new one.

How To Make Mexican Pizza In The Air Fryer
Yield: 4 pizzas

How To Make Mexican Pizza In The Air Fryer

Prep Time: 10 minutes
Cook Time: 12 minutes
Total Time: 22 minutes

This Taco Bell Mexican pizza recipe is a great recipe to make in an air fryer or traditionally. My recipe was inspired by the taco bell Mexican pizza.


  • 1 pound ground beef
  • 1 serving homemade taco seasoning (click for the recipe)
  • 1 10-ounce can of red enchilada sauce
  • 8 flour tortillas
  • 1 16-ounce can of refried beans, warmed
  • 2 Roma tomatoes, diced
  • 1/2 cup mozzarella cheese
  • 1/2 cup cheddar cheese
  • 1/2 cup Mexican blend
  • ⅔ cup water

Optional Toppings

  • sour cream
  • cilantro
  • taco sauce
  • salsa


  1. Mix cheeses and set aside
  2. Preheat your oven to 400 degrees F Or
  3. Preheat your air fryer to 370 degrees F
  4. Over medium-high heat, cook the ground beef taco bell mexican pizza 2 1
  5. Once browned add in the homemade taco seasoning and water and bring to a boil taco bell mexican pizza 3
  6. Reduce to a simmer and allow to thicken 
  7. Remove from heat and set aside
  8. For the tortilla shells
  9. cook in the oven for 5 minutes Or
  10. Air fryer for 4 minutes until crispy taco bell mexican pizza 5
  11. To assemble each (you will have 4 pizzas)
  12. Spread refried beans on the 4 crispy cooked shells taco bell mexican pizza 7
  13. Top the bottom layer with 1/4th of the taco meat taco bell mexican pizza 8
  14. Then top with another crispy tortilla
  15. Top that tortilla with 1/4th enchilada sauce and 1/4th cheesetaco bell mexican pizza 10
  16. Lastly, sprinkle on 1/4th of the diced tomatoes taco bell mexican pizza 12
  17. Cook in the air fryer at 370 for 8 to 10 minutes until cheese melted
  18. Or
  19. Cook in a traditional oven at 400 for 10 to 12 minutes

There is something about the tortilla they use that makes this impossible to replicate. It's light and crispy, unlike a fried tortilla. I asked them and they said they get them that way and they just put them together. I wish I could figure out the tortilla part. The rest would be easy.
