You could easily add cauliflower rice, and sub ground turkey and still stay within your daily macros. And even if you aren’t on a low carb diet, you can slap this on a tortilla and it is great.
I have been back on for about a week now and I have lost 8 lbs sticking to a low carb high-fat diet, and it is going great! My kids even went back in for seconds, my youngest grabbed some tortilla chips and ate it as a dip, while I wrapped mine in lettuce and topped with guacamole and sour cream. - 2 tbs chili powder
- 1 tbs ground cumin
- 1 1/2 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- 1 tsp black pepper
- 1/2 tsp dried oregano
- 1 lb ground beef
- 2 cups tomatos diced canned, about 14.5 ounce
- 1/2 cup green chilies canned, about 4.5 ounce
- 1/4 cup cilantro fresh, chopped
- 1 cup onion chopped
- 2 cups cheddar shredded, I like triple cheddar
- 2 tbs olive oil
- 1/4 cup cilantro chopped
Heat skillet on med-hi heat and add olive oil
Add chopped onions and cook until they become almost translucent
Put ground beef in the skillet, cook until no longer pink, chopping as it cooks
Add tomatoes and green chilies, with their juices and stir
Add spices and stir in well
Stir in cilantro
Reduce to low and allow to simmer 5 to 7 minutes to thicken
To with cheese and cover 3 to 5 mins or place in the oven under the broiler 5 mins
Serve with sour cream and fresh guacamole
