Riced cauliflower has become a low carb staple since living a Keto lifestyle became popular. I have been trying to get back on my game, so tonight I made this Cilantro Lime Cauliflower Rice. The combination of flavors when you put cilantro and lime juice together make my taste buds very happy. This would be a great way to make an awesome burrito bowl, instead of white rice, you could use this. You can even leave the lime and cilantro out and just add some salt and pepper and enjoy it like that.
Cilantro Lime Cauliflower Rice
The thing I love about cauliflower rice is that its texture (when done right) is a lot like regular rice. And this Cilantro Lime Cauliflower Rice was no different. Cilantro and lime give it some amazing flavor, causing any blandness you associate with traditional cauliflower to go away and it is, vegan, gluten-free and paleo.

Eat this as a stand-alone, for a quick snack in a taco bow or with plain chicken breast, the possibilities are pretty much endless. This is definitely one I will make again and again. With LCHF you really have to be willing to try things you wouldn’t normally try and this is one that I do not regret.
I did really well with the diet for a good while and through meal prep and plain on motivation to have an awesome summer body, and I plan on getting it back together. It would be great to hear your tips as far as what you do when you feel like a ‘cheat day” because mine turns into a good 6 months or more.

I have been trying to get back on my game, so tonight I made this Cilantro Lime Cauliflower Rice. I love the combination of flavors when you put cilantro and lime juice together.
- 1 small head of cauliflower riced or grated
- 1/2 white onion diced
- 2 garlic cloves minced
- 1/2 cup cilantro chopped
- lime zest from 1 whole lime
- 1 Tbs lime juice
- 2 Tbs olive oil
- salt and pepper to taste
- Heat pan on medium high heat, add olive oil
Once oil is heated, add cauliflower (mine was pre riced and frozen so it had some water in it) cook till no water left
- Add onion and garlic cook for about a minute stirring constantly
- Add zest and juice stir in well
Put in the cilantro cook for about another 2 minutes
Finish with salt and pepper
