Keto English Muffin Recipe

Prep Time: 5 minutes
Cook Time: 2 minutes
Total Time: 7 minutes

This keto English muffin recipe is for sure going to change the way you do breakfast in your home. There are so many different ways you can enjoy them throughout the day!

Ingredients

  • 1/4 cup almond flour
  • 3 tbsp heavy whipping cream
  • 1 tsp baking powder
  • 1/2 tsp dill
  • 1/2 tsp garlic powder
  • 1 egg
  • 2 eggs scrambled
  • 3 slices bacon
  • 1/2 avocado
  • 1 slice cheese

Instructions

  1. Prepare scrambled eggs and bacon. Cut avocado and cheese.
  2. In a bowl, mix dry ingredients.
  3. Add 1 egg and heavy whipping cream and whisk.
  4. Pour into a greased ramekin (or mug) and microwave 90 seconds.
  5. Remove from ramekin and slice in half.
  6. Top with scrambled eggs, bacon, cheese, and avocado.
  7. Enjoy!

Notes

Tips

To maximize time, beat eggs and add to a microwave-safe bowl. Microwave on high for 45 seconds.

For bacon, line a plate with 2 paper towels. Add bacon and microwave 1 1/2 minutes or until desired crispness is reached.

If desired, toast bread in the oven after cooking for 5 minutes at 350*
