Sometimes diets or lifestyle changes still need chocolate in them. I had to figure out how to feed my unbearable craving for chocolate, and of corse, I needed to make it quick so I used my Instant Pot to make these Instant Pot Keto Chocolate Mini Cakes.
These Instant Pot Keto Chocolate Mini Cakes turned out amazing and topping it off with Halo Top ice cream made them even more amazing!
I think the hardest thing about going low carb, is letting go of the sugar, but fear not, these amazing little Instant Pot Keto Chocolate Mini Cakes have zero, yup you heard that right, zero grams of carbs!
Can you imagine a treat, a sweet treat at that that involves no sugar. Well, you don’t have to because I have made them a reality. And with only 5 net grams of carbs and 168 calories per serving, you don’t have to feel guilty about enjoying them. I love making mini things, and when I do, these are my favorite ramekins to use. The Pioneer Woman ramekins are sturdy and you can fit up to 6 in a 6 quart Instant Pot.
Instant Pot Keto Chocolate Mini Cakes for 2 Only 5 Grams of Carbs per Serving

- 2 tbs Splenda
- 2 large eggs
- 2 tbsp heavy cream
- 1/2 tsp baking powder
- 1 tsp vanilla extract
- 1/4 c baking cocoa
- In a bowl, mix dry ingredients well
Add dry ingredients and whisk till mooth
- Spray ramekins
- Fill each cup about half way
- Add 1 cup of water to your pot
- Place trivet in the pot
- Put your ramekins in the pot
- Place on lid, and close valve
- Press manual high pressure and set for 9 minutes
- When you hear the beep, quick release, remove and flip onto a plate
- Add Halo Top Vanilla Ice Cream and enjoy
