Keto Cauliflower Mac And Cheese
With just five ingredients and an air fryer, you will be able to make this yummy keto cauliflower mac and cheese recipe. It will only take a little over an hour to complete.
Ingredients
- 1 head cauliflower, cut into florets
- pinch of salt
- ¾ cup heavy whipping cream
- 2 teaspoon garlic powder
- 3 cups fresh shredded cheddar cheese, divided
- 2 eggs beaten
Instructions
- Preheat air fryer or air fryer oven to 400.
- Place cauliflower florets in a single layer on the air fryer tray or in a pan that will fit into your air fryer basket.
- Place the cauliflower in the air fryer for 15 minutes
- While you are roasting the cauliflower, in a bowl add heavy whipping cream, garlic powder, and eggs and beat together. You can add salt and pepper to taste.
- Once your cauliflower is done roasting remove it from the air fryer and reduce the heat to 370.
- Now add the cauliflower to a dish that is safe for your air fryer. I like to use smaller dishes for single servings.
- Fold 2 ½ cups of the shredded cheddar cheese into the egg mixture.
- Pour the mixture over the cauliflower in the dish and fold the cauliflower together with the egg mixture.
- Top with remaining cheese.
- Bake, uncovered, for 35 to 40 minutes, or until the top is golden.
- Allow resting 5 minutes before serving.
