When is comes to the keto Zuppa Toscana, there are a few changes that are made. The ingredients that have a lot of carbs are taken out and replaced by keto-friendly ingredients.

For example, kale packs a lot of carbs, so in the keto soup, it is replaced with a low-carb option. The same goes for potatoes, as they are replaced with a more keto-friendly substitute, which gives it the same taste and consistency.

With the keto Zuppa Toscana, there will be a lot less grams of carbs per serving. It will be more along the lines of the numbers you want to hear when you are eating keto.

Keto Zuppa Toscana In The Instant Pot

Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes

Much like the popular soup at Olive Garden, this recipe will leave you with a full belly and happy face! Your whole family will enjoy this dinner

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 pound ground pork
  • 1 teaspoon fennel seed
  • 1 teaspoon crushed red pepper flakes
  • 1 teaspoon paprika
  • 1 teaspoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon Italian seasoning
  • 2 teaspoons salt
  • 2 garlic cloves, minced
  • 4 cups chicken stock
  • 1 pound radishes, peeled and halved
  • Tops from a farmer’s market bushel of Ramps, chopped into 1 inch pieces (can substitute with 2-3 cups of your choice of low carb leafy greens)
  • 1 cup heaving whipping cream

Instructions

  1. In a mixing bowl, knead seasonings into ground pork.
  2. Set Instant Pot to sauté and cook meat until browned. (Do not drain)
  3. Add garlic and continue to sauté for a minute.
  4. Add in radishes and stock and mix.
  5. Lock the lid in place and set Instant Pot to Pressure Cook on High for 10 minutes.
  6. Allow to naturally release for 5 minutes, then very carefully, manually release the remaining pressure.
  7. When ready, open lid and slowly stir in the whipping cream and ramp greens. Salt and pepper to taste.
  8. Serve warm and enjoy!
