Firstly, let me say that this strawberry cake recipe is pretty amazing. Secondly, I decided not to add the traditional strawberry buttercream to it. I also decided to frost the cake with a special blend of powdered sugar and cream cheese.

In short, cream cheese frosting just melts in your mouth. Now, the strawberry flavor from the strawberry puree is so light and fluffy.

Above all, this strawberry cake comes together amazingly. I opted for cake flour as opposed to all-purpose flour, and pureed strawberries instead of frozen strawberries. Similarly, add whipping cream between the layers of this strawberry cake, to make it a little more fun.

You can certainly, add some vanilla extract. And a squeeze of lemon juice into the frosting mix to give it a little more flavor.

Strawberry cake is a great supper recipe that everyone will love. Try out this strawberry cake and the tips to make it unique.


  • 3 cups cake flour
  • 1 cup butter, at room temperature
  • 1 3/4 cups sugar
  • 5 egg whites
  • 2 cups strawberries, pureed
  • 1/2 cup sour cream
  • 1 teaspoon strawberry extract
  • 2 1/2 teaspoons baking powder
  • 1/4 teaspoons baking soda
  • 1/4 tsp salt
  • 8 ounces cream cheese, softened
  • 1/4 cup butter, softened
  • 3 1/4 cup powdered sugar
  • Filling
  • 1 cup seedless strawberry jam, divided


  1. Preheat the oven to 350 F.
  2. Grease and flour three 9 inch round pans, set aside.
  3. Use a stand mixer to cream the butter and sugar until it looks fluffy.
  4. Now add the egg whites, one at a time. Mix well between each 1.
  5. Beat in the pureed strawberries, sour cream, and strawberry extract.
  6. In a separate bowl combine the flour, baking powder, baking soda, and salt.
  7. Mix into the creamed mixture.
  8. Divide the batter evenly in your prepared pans.
  9. Bake 20 to 25 minutes or until you can stick a toothpick near the center and it comes out clean.
  10. Allow the cake to cool completely before removing it from the pan.
  11. Cream the cream cheese and butter until fluffy.
  12. Add the powdered sugar and beat until smooth.
  13. Using a knife level the top of the cake layers with a knife. Do not throw this part away, set it aside for now.
  14. On a plate or serving platter place your first cake layer.
  15. Top with jam and then frosting around the edges, repeat with remaining layers.
  16. Crumble the cake you set to the side and spread around the sides.


Garnish with optional sliced strawberries.
