Ingredients
- 3 cups cake flour
- 1 cup butter, at room temperature
- 1 ¾ cups sugar
- 5 egg whites
- 2 cups strawberries, pureed
- ½ cup sour cream
- 1 teaspoon strawberry extract
- 2 ½ teaspoons baking powder
- ¼ teaspoons baking soda
- ¼ teaspoon salt
- FROSTING
- 8 ounces cream cheese, softened
- ¼ cup butter, softened
- 3 ¼ cup powdered sugar
- Filling
- 1 cup seedless strawberry jam, divided
Instructions
- Preheat the oven to 350 F.
- Grease and flour three 9 inch round pans, set aside.
- Use a stand mixer to cream the butter and sugar until it looks fluffy.
- Now add the egg whites, one at a time. Mix well between each 1.
- Beat in the pureed strawberries, sour cream, and strawberry extract.
- In a separate bowl combine the flour, baking powder, baking soda, and salt.
- Mix into the creamed mixture.
- Divide the batter evenly in your prepared pans.
- Bake 20 to 25 minutes or until you can stick a toothpick near the center and it comes out clean.
- Allow the cake to cool completely before removing it from the pan.
- Cream the cream cheese and butter until fluffy.
- Add the powdered sugar and beat until smooth.
- Using a knife level the top of the cake layers with a knife. Do not throw this part away, set it aside for now.
- On a plate or serving platter place your first cake layer.
- Top with jam and then frosting around the edges, repeat with remaining layers.
- Crumble the cake you set to the side and spread around the sides.
